Savory Cabbage and Beef Rolls

Ingredients:

– 2 heads of cabbage

 

– 2 lbs ground beef

 

– 3 cups cooked rice

 

– 1 onion, finely chopped

 

– 3 cloves garlic, minced

 

– 2 cups tomato sauce

 

– 1/4 cup fresh parsley, chopped

 

– 1 tsp salt

 

– 1/2 tsp black pepper

 

– 2 tbsp olive oil

– 1 cup water

 

Directions:

1. Bring a large pot of water to a boil. Core the cabbages and carefully peel off the leaves, blanching them in the boiling water for 2-3 minutes until pliable. Drain and set aside.

 

2. In a bowl, mix the ground beef, cooked rice, onion, garlic, parsley, salt, and pepper.

 

3. Place a portion of the beef mixture in the center of each cabbage leaf. Fold in the sides and roll up the leaf to enclose the filling.

 

4. In a large skillet, heat the olive oil over medium heat. Place the cabbage rolls seam side down and cook until lightly browned, about 5 minutes.

 

5. Pour the tomato sauce and water over the cabbage rolls. Cover and simmer for about 40 minutes, or until the meat is cooked through.
