mini pineapple cheesecakes

**Ingredients:**
– 1 cup crushed graham crackers
– 1/4 cup melted butter
– 1/4 cup brown sugar
– 8 ounces cream cheese, softened
– 1/2 cup granulated sugar
– 1 teaspoon vanilla extract
– 1 cup crushed pineapple, drained
– 2 large eggs
– Maraschino cherries for garnish (optional)

**Instructions:**
1. Preheat oven to 325°F (160°C).
2. Mix graham crackers, melted butter, and brown sugar. Press into mini cheesecake cups or muffin tins.
3. Beat cream cheese until smooth. Add granulated sugar and vanilla extract.
4. Fold in crushed pineapple.
5. Add eggs one at a time, mixing well after each addition.
6. Pour batter over crusts.
7. Bake for 20-25 minutes until set.
8. Cool and refrigerate for at least 2 hours.
9. Garnish with maraschino cherries if desired.
