Lemon Shortbread Cookies

Recipe
Ingredients:
1 cup unsalted butter, softened
1/2 cup powdered sugar
1 tablespoon lemon zest
2 cups all-purpose flour
1/4 teaspoon salt
Directions:
Preheat oven to 350°F (175°C).
In a mixing bowl, cream together butter, powdered sugar, and lemon zest until fluffy.
Gradually mix in flour and salt until the dough comes together.
Roll the dough into a log, wrap in plastic wrap, and chill for 30 minutes.
Slice the dough into 1/4-inch thick rounds and place on a baking sheet.
Bake for 12-15 minutes or until the edges are just golden.
Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
