HOMEMADE PINEAPPLE PUDDING

Ingredients:

 

1 can (20 oz) pineapple in syrup or pineapple juice

6 cups stale bread or cake (preferably crustless), cut into cubes

4 large eggs

1 cup of sugar

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup melted butter

Preheat the oven to 180°C (350°F) and lightly grease a baking pan with butter or non-stick spray.

 

Drain the pineapple, reserving the liquid. Cut the pineapple into small pieces.

 

In a large bowl, beat the eggs and sugar until well combined. Add the vanilla extract and salt, and continue beating.

 

Add the cut pineapple and the stale bread or cake to the egg and sugar mixture. Stir well to make sure all the bread pieces are coated with the mixture.

 

Pour the melted butter over the mixture and stir again to distribute evenly.

 

Pour the mixture into the prepared pan, pressing lightly with a spoon or spatula to make sure it is compact.

 

Bake in the preheated oven for approximately 45-50 minutes, or until the pudding is golden brown and firm to the touch.

 

While the pudding is in the oven, you can make an optional glaze by mixing some of the pineapple liquid with icing sugar, then pouring it over the hot pudding right after removing it from the oven.

 

Let the pudding cool slightly before serving. You can accompany it with whipped cream, vanilla ice cream or just enjoy it on its own. Enjoy your homemade pineapple pudding!
