- 8 oz cream cheese, softened
- 1/4 cup mayonnaise
- 1 tablespoon fresh dill, finely chopped
- 1 tablespoon fresh parsley, finely chopped
- 1 teaspoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 8 slices white sandwich bread
- 1 large cucumber, thinly sliced
- Extra dill or parsley for garnish Directions:
- Make the Cream Spread: In a medium mixing bowl, combine the softened cream cheese, mayonnaise, chopped dill, chopped parsley, lemon juice, and garlic powder. Mix until smooth and creamy. Season with salt and black pepper to taste.
- Slice the Cucumber: Wash and peel the cucumber if you prefer. Slice it into thin, even rounds using a mandoline or sharp knife. Pat the slices dry with a paper towel to remove excess moisture.
- Prepare the Bread: Lay out the slices of bread on a cutting board. Trim the crusts from each slice to create clean edges for a classic tea-time look.
- Assemble the Sandwiches: Spread a generous layer of the cream cheese mixture on one side of each slice of bread. Place cucumber slices in a single layer on half of the bread slices, slightly overlapping them. Top with the remaining bread slices, cream spread side down.
- Cut and Garnish: Use a sharp knife to cut each sandwich into two triangles or small squares for a beautiful presentation. Arrange the sandwiches on a serving platter and garnish with extra dill or parsley.
- Serve and Enjoy: Serve these refreshing cucumber sandwiches immediately for the best flavor and texture. They go perfectly with hot tea or a chilled drink. If making ahead, cover tightly with plastic wrap and refrigerate for up to 4 hours. Prep Time: 15 minutes
