**Ingredients:**

*Crust:*
– 2 1/2 cups graham cracker crumbs
– 1/2 cup melted unsalted butter

*Filling:*
– 3 packages (24 oz) full-fat cream cheese, room temperature
– 1 1/2 cups powdered sugar
– 1/4 cup key lime or lime juice
– 1-2 tablespoons key lime or lime zest
– 1 teaspoon vanilla extract
– 3/4 cup cold heavy whipping cream

– Sweetened whipped cream

1. **Prepare the Crust:** Mix graham cracker crumbs with melted butter. Press into an 8-inch or 9-inch springform pan.

2. **Make the Filling:** Beat cream cheese until smooth. Add powdered sugar, lime juice, lime zest, and vanilla extract, mixing well. Whip heavy cream to stiff peaks and fold into the cream cheese mixture.

3. **Assemble the Cheesecake:** Spread filling over the crust. Refrigerate for 5-6 hours or until set.
