2. In a bowl, mix sugar cookie crumbs with melted butter until it resembles wet sand.

3. Press the mixture into the bottom of the springform pan. Use a flat-bottomed cup to ensure it’s packed tightly.

4. Bake for 10 minutes, then let it cool while preparing the filling.

2. Make the Cheesecake Filling:

1. In a large bowl, beat the softened cream cheese and sugar with a mixer until smooth and creamy.

2. Add eggs one at a time, mixing just until combined.

3. Mix in sour cream, heavy cream, vanilla extract, and almond extract (if using).

4. Fold in festive sprinkles gently.

3. Bake the Cheesecake:

1. Pour the filling over the cooled crust. Smooth the top with a spatula.

2. Wrap the outside of the springform pan in aluminum foil to prevent leaks and place it in a larger baking dish. Fill the dish with about 1 inch of hot water (water bath).

3. Bake for 70–80 minutes, or until the edges are set and the center is slightly jiggly.

4. Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.

5. Remove the cheesecake from the water bath, let it cool completely, then refrigerate for at least 4 hours (or overnight).

4. Decorate and Serve:

1. Top with whipped cream, sprinkles, and mini sugar cookies if desired.

2. Slice and enjoy your festive cheesecake!

This cheesecake is a delightful centerpiece for your Christmas dessert table!
