Ingredients for Chicken Kofta:
600g minced chicken
1 onion (150g), grated and water strained
1/4 cup parsley (10g), finely chopped
3 cloves garlic (12g), minced
2 tbsp breadcrumbs (49g)
1 tsp cumin
1 tsp paprika
1/2 tsp black pepper
Salt, to taste
Vegetable oil, for cooking
Ingredients for Sauce:
Tomatoes, chopped
Hot peppers, finely sliced or minced
Vinegar, to taste
Garnish:
Bell peppers, sliced
Instructions:
Prepare the Kofta Mixture:
In a large mixing bowl, combine the minced chicken, strained grated onion, finely chopped parsley, minced garlic, breadcrumbs, cumin, paprika, black pepper, and salt. Mix thoroughly until all the ingredients are well incorporated.
Shape the Koftas:
Using your hands, shape the mixture into small, oblong koftas or patties. You can also form them into small balls if preferred.
Cook the Koftas:
Heat vegetable oil in a large skillet over medium heat. Once hot, add the koftas and cook for about 4-5 minutes on each side, or until they are golden brown and cooked through. Remove the koftas from the skillet and set aside.
Prepare the Sauce:
In the same skillet, add more oil if needed, and sauté the chopped tomatoes and hot peppers. Cook until the tomatoes break down and start to form a sauce. Add vinegar to taste and let the sauce simmer for a few minutes to blend the flavors.
Combine Koftas and Sauce:
Return the cooked koftas to the skillet with the tomato and pepper sauce. Toss gently to coat the koftas in the sauce and heat everything together for a few more minutes.
Garnish and Serve:
While the koftas are simmering in the sauce, quickly sauté the sliced bell peppers in a separate pan until they are just tender but still crisp.
Serve the chicken kofta kebabs hot, topped with the sautéed bell peppers.
Tips:
Serving Suggestions: Serve these chicken kofta kebabs over a bed of rice, couscous, or with flatbread like naan or pita to soak up the delicious sauce.
Adjusting Heat: Depending on your preference for spice, you can adjust the amount and type of hot peppers used in the sauce. For a milder version, consider using bell peppers in the sauce as well.
Alternative Cooking Methods: These koftas can also be grilled or baked for a healthier version. If grilling, ensure the grill is well-oiled to prevent sticking.
