Directions

Start by pre-baking a 9-inch pie crust and allowing it to cool completely. You can use a store-bought pie crust or make your own.

In a large saucepan, mash 2 cups of the fresh strawberries. Add the granulated sugar, cornstarch, and water to the mashed strawberries. Stir to combine.

Cook the strawberry mixture over medium heat, stirring constantly, until it comes to a boil. Reduce the heat and let it simmer for 2-3 minutes or until it thickens.

Remove the saucepan from the heat and stir in the strawberry-flavored gelatin until it’s completely dissolved. Let the mixture cool to room temperature.

While the strawberry mixture is cooling, arrange the remaining 2 cups of fresh strawberries in the pre-baked pie crust.

Once the strawberry mixture has cooled but is still pourable, pour it over the fresh strawberries in the pie crust. Make sure it’s evenly distributed.

Refrigerate the pie for at least 4 hours, or until it’s set.

Before serving, you can top the pie with whipped cream for an extra touch of sweetness if desired

ENJOY!
