Ingredients:
3/4 cup unsalted butter, melted
1/4 cup granulated sugar
1/2 cup golden brown sugar
2 eggs
1 tsp vanilla extract
4 ripe bananas
1 3/4 cup all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup semisweet chocolate chips
1 cup walnuts, chopped
Instructions:
In a large mixing bowl, combine 1/4 cup granulated sugar, 1/2 cup golden brown sugar, and 3/4 cup of unsalted melted butter. Mix for about 1 minute on medium-low speed.
Add 1 teaspoon vanilla extract and 2 large eggs, mixing on medium speed.
Mash 4 ripe bananas in a separate bowl, then incorporate them into the muffin batter.
Sift in 1 3/4 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt. Mix the dry ingredients into the banana muffin batter.
Fold in 1 cup of chopped walnuts and 1 cup of semisweet chocolate chips with a spatula.
Line a muffin tin with cupcake liners and fill each muffin cup. You should get about 12-13 full muffins from this recipe.
Top the muffins with extra chocolate chips and bake at 350 degrees Fahrenheit for 20-24 minutes.
Notes :
Sift the dry ingredients to ensure they combine thoroughly with the wet ingredients and avoid clumps of flour.
Ripen bananas quickly by baking unripe bananas on a baking sheet at 350 degrees for 15 minutes. Let them cool before using.
Use cupcake liners to avoid mess, as the melted chocolate can ooze out.
Adding chocolate chips on top gives the muffins a professional look with a delicious covering of melting chocolate chips.
