Ingredients
4 salmon fillets
1 bunch of asparagus, trimmed
4 cloves garlic, minced
2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon lemon zest
1 teaspoon dried oregano
Salt and pepper to taste
Lemon slices for garnish
Fresh dill or parsley for garnish
Directions
Preheat your oven to 375°F (190°C).
Lay out four large pieces of aluminum foil, each about 12 inches (30 cm) in length. Place a salmon fillet in the center of each piece of foil.
In a small bowl, whisk together the minced garlic, olive oil, lemon juice, lemon zest, dried oregano, salt, and pepper.
Drizzle the garlic and lemon mixture over each salmon fillet.
Arrange asparagus spears around each salmon fillet.
Fold the sides of the foil over the salmon and asparagus, creating a packet. Make sure to seal the edges tightly to trap in the steam.
Place the foil packets on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
Carefully open the foil packets (watch out for steam), garnish with lemon slices and fresh dill or parsley, and serve hot.
