Baked Cottage Cheese Eggs – a protein-packed breakfast favorite

Ingredients:

  • 4 large eggs
  • 1 cup cottage cheese
  • ½ cup shredded cheddar cheese (or your preferred cheese)
  • 2 tablespoons chopped fresh chives (optional)
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • Non-stick cooking spray or butter (for greasing)

  1. Preheat Oven
  • Preheat your oven to 375°F (190°C) and lightly grease four small ramekins or an 8×8-inch baking dish with non-stick cooking spray or butter.
  1. Mix Ingredients
  • In a medium bowl, whisk the eggs until combined. Stir in the cottage cheese, shredded cheddar, garlic powder, salt, and pepper. Add chopped chives if desired.
  1. Pour into Baking Dish
  • Divide the mixture evenly among the ramekins or pour it all into the prepared baking dish.
  1. Bake
  • Bake for 20-25 minutes, or until the eggs are set and the top is golden brown.
  1. Serve
  • Allow to cool slightly before serving warm. Garnish with additional chives if desired.
